Spicy Garlic Chicken Pizza

1/2 Cup Rice Wine Vinegar

1 Cup soy sauce

5 Tablespoons honey

1 Head of Garlic, minced

1 Tablespoon dried red pepper

2 Tablespoon olive oil

4 Chicken breasts cut into small pieces

1 Tablespoon sesame seeds, browned

4 Green onions, chopped

1 Boboli pizza crust

Mozzarella cheese, grated

Gruyere cheese, grated

 

Stir-fry chicken in 1 Tbsp oil until white.  Mix together first 5 ingredients stirring constantly over med-high heat until a thick glaze forms.  Add chicken and cook 2 minutes until well-coated.  Remove from heat.  Brush 1 Tbsp oil on Boboli and cover it with equal parts Mozzarella and Gruyere cheese.  Put chicken and 1 Tbsp of glaze on top.  Cook at 400ºF for 12 minutes until crust is crisp and cheese melts.  Add onions and cook 2 more minutes.  Sprinkle with sesame seeds and enjoy.

Pecan Crusted Chicken

1/4 Cup Melted Butter

1/2 Teaspoon Garlic Powder

1/2 Cup Dry Breadcrumbs

1/4 Cup Flour

!/2 Cup Finely Chopped Pecans

1/4 Cup Sesame Seeds

1 Teaspoon Salt

1/2 Teaspoon Freshly Ground Pepper

6 Skinned, Boned Chicken Breasts

2 Tablespoons Butter

2 Tablespoons Olive Oil

 

Combine 1/4 cup butter and garlic powder in a small bowl, stir well and set aside.  Combine breadcrumbs, flour, pecans, sesame seeds, salt and pepper in a shallow dish.  Place each chicken breast between 2 sheets of heavy-duty plastic wrap; flatten to 1/2" thickness using a meat mallet or rolling pin.  Brush both sides of chicken with garlic butter; dredge in the breadcrumb mixture.  Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium heat until butter melts.  Add 3 chicken breasts, cook 4 to 6 minutes on each side or until lightly browned and done.  Transfer to a serving dish and repeat with remaining chicken.

Pork Chops

8 lean pork chops

Flour

Olive oil

1/2 cup soy sauce

1/2 cup catsup

1/4 teaspoon celery seed

1/2 teaspoon nutmeg

1 bay leaf

1/2 cup water

1 pkg button mushrooms

 

Flour pork chops and brown in olive oil.  Combine other ingredients and pour over chops in casserole.  Cover.  Bake at 325° for 1 hour 30 minutes.
